Tuscan White Bean Soup

Serving Size: 4  |  Cook Time: 45 min.

Ingredients:

  • 2 Pouches Osso Good Chicken Bone Broth
  • 1 small escarole (chopped)
  • 1 onion (chopped)
  • 3 celery stalks (chopped)
  • 4 garlic cloves
  • 1 can of whole tomatoes (28oz)
  • 2 tbsp olive oil
  • salt and pepper
  • Fennel bulb (chopped)
  • 2 cans of cannellini beans (drained)
  • 1 tbsp oregano
  • 1/8 tsp red pepper flakes

Method:

  1. Pulse your onions, celery and garlic cloves in a food processor
  2. Place in a large pot with olive oil
  3. Pulse your tomatoes and pour into the pot
  4. Simmer on medium heat for about 5-10 minutes
  5. Add in your broth and fennel
  6. Simmer for another 5 minutes
  7. Add in the rest of the ingredients
  8. Simmer for about 15 minutes or until warm
