Ingredients:
- 2 Pouches Osso Good Chicken Bone Broth
- 1 small escarole (chopped)
- 1 onion (chopped)
- 3 celery stalks (chopped)
- 4 garlic cloves
- 1 can of whole tomatoes (28oz)
- 2 tbsp olive oil
- salt and pepper
- Fennel bulb (chopped)
- 2 cans of cannellini beans (drained)
- 1 tbsp oregano
- 1/8 tsp red pepper flakes
Method:
- Pulse your onions, celery and garlic cloves in a food processor
- Place in a large pot with olive oil
- Pulse your tomatoes and pour into the pot
- Simmer on medium heat for about 5-10 minutes
- Add in your broth and fennel
- Simmer for another 5 minutes
- Add in the rest of the ingredients
- Simmer for about 15 minutes or until warm
